Shrimp!!!! Shrimp are the best. But combined with Garlic and Butter, it is true perfection!

This recipe is perfect for lunch, dinner, snacks and if your super brave…Breakfast (not that I’ve ever done that). This meal can be made in less than 20 minutes, that’s what I like to hear when I get home from a busy day of work.
I’m going to admit, I made have made this recipe more than is probably healthy but it really is that good. I find it difficult to pick a favourite recipe, but this one comes very close.
So without further a do, let’s get into the recipe.
Garlic Butter Shrimp Recipe
Serving: 4 Prep time: 10 minutes Cooking time: 10 minutes
Ingredients:
- 114 grams (8 Tbsp) unsalted butter, divided
- 680 grams (1 1/2 pounds) medium shrimp, peeled and deveined
- Kosher salt and freshly ground black pepper, to taste
- 5 cloves garlic, minced
- 1/4 cup chicken stock
- Juice of 1 lemon, or more, to taste
Method:
- Melt 2 tablespoons butter in a large skillet on medium high heat. Add shrimp, salt and pepper, to taste. Cook, stirring occasionally, until pink, about 2-3 minutes; set aside.
- Add garlic to the skillet, and cook, stirring frequently, until fragrant, about 1 minute. Stir in chicken stock and lemon juice. Bring to a boil; reduce heat and simmer until reduced by half, about 1-2 minutes. Stir in remaining 6 tablespoons butter, 1 tablespoon at a time, until melted and smooth.
- Stir in shrimp and gently toss to combine.
- Serve immediately.
Top Tip: I like to serve with white rice or pasta for a proper dinner and just have it as is for lunch.
